Eggless Chocolate Chip Cookies

What?!? It has been a month since my last blog post. I have always tried to be regular with my posts. Okay, at least, I don’t think there has ever been such a long gap before. No excuses whatsoever. I just did not have the right mind for it or to be more honest, I have been too lethargic. Trust me, I really feel so bad about it now. I made these cookies which now looks like forever ago and here, I am updating the recipe only now!  I am just hoping it never happens again.



Before I die of guilt, let me give the recipe of these delicious eggless chocolate chip cookies. It tasted just perfect. You can never guess that they are eggless. So let’s get started! Shall we?


Recipe reference: Spice Up The Curry



Ingredients

All purpose Flour: 1 cup +2 tbs

Salt: 1/4 tsp
Baking Soda: 1/2 tsp
Unsalted butter at room temperature: 1/2 cup
Granulated sugar: 1/4 cup
Light Brown sugar: 1/4 cup
Vanilla Extract: 3/4 tsp
Milk - 2  tbs
Chocolate chips - as much as you need.

Method:


1. Preheat oven to 350 degree F.
2. Whisk together - all purpose flour, salt and baking soda in a bowl.
3. In another bowl,  beat the butter until it becomes creamy and smooth.
4. Add granulated and brown sugar and beat it until fluffy.
5. Add vanilla extract and milk. Whisk. Whisk.
6. Add the dry ingredients from step 2 and mix till it is well incorporated.
7. Add chocolate chips and give it a good mix.
8. Make small balls from the cookie dough and flatten it using your fingers. Place them in a cookie tray.
9. Bake for about 12 minutes or until golden brown.
10. Allow it to cool for at least 10 minutes before transferring to the cooling rack.
11. Let it cool completely and then you can enjoy these amazing eggless chocolate chip cookies. It will definitely be worth the wait.


Tips:

1. The dough should not be too sticky. So it is preferred to refrigerate the dough for 30 minutes before making the balls.

2. Every oven is different. So keep an eye on them from 10 minutes to until it is golden brown or when you insert a toothpick, it comes out clean.
3. Allow it to cool completely if you do not want to break the cookie completely before eating.
