I remember the first time I had Pav Bhaji Masala in a place called Gangotree Chat house in Chennai. The very moment I fell in love with the aromatic smell of the butter in the pav and the masala. For a long time, I was craving for Pav Bhaji masala ;) so i decided to do this yummy chat recipe. Whenever I go out, I order pav bhaji or bhel puri, without a second thought. They are my all time favourite chat. Pav Bhaji is easy to make, it has almost all vegetables. I followed a simple version of this chat recipe. Here we go with the recipe.

Method
- Pressure cook the potatoes (peel the skin off and cut the potatoes like other veggies).
- Cut the veggies, pressure cook with salt and little water for 2 whistles.
- Heat a skillet with butter, add green chilli, onion and ginger garlic paste, fry till the onion turns transparent and raw smell of the ginger garlic paste goes off.
- Then add capsicum & fry for a minute (crispiness of the capsicum should be retained), then add chopped tomatoes, salt, pav bhaji masala and red chilli powder.
- Fry till the tomato get soft and mushy, then add the boiled potato and veggies. Now mash the veggies with the masher until it blends with the masala.
- Simmer for 5 mins and stir well once, then add chopped cilantro to the masala and mix well.
- Meanwhile in another skillet add a tsp of butter, toast the pav bun both side till it turns to golden brown colour.
- Garnish the pav bhaji masala with finely chopped onion, cilantro and squeeze the lemon as needed, serve it hot.
Tips
- Veggies can be added to your choice.
- Potatoes and veggies should be separately pressure cooked. Since the veggies are cut into small cubes, so the cooking time will be less when compared to the potatoes.
- I used pav bun but you can also use burger bun or white bread.
- Capsicum shouldn't be over-cooked,crispiness and colour of the vegetable must be retained.
- This chat recipe can be served as appetizer/ snacks for the guest.
