Rava Ladoo


Rava Ladoo/Laddu has evolved into ubiquitous Indian sweet over several decades. These are melt-in-mouth  treats  made from ghee roasted semolina, coconut & milk and  studded with crispy golden cashews and raisins. Like besan ladoo, rava ladoo is also very easy to make and a perfect festive sweet recipe for Diwali, Ganesh chathurti and other festivals & occasions.   


Ingredients makes 15 laddus
  • rava/ semolina/sooji - 1 cup
  • ghee - 1/4 cup
  • grated coconut - 1/2 cup
  • sugar - 3/4 cup
  • cardamom powder - 1/2 tsp
  • milk - 1/4 cup
  • cashews & raisins - a handful
Method
Note - Keep the flame low throughout the process

  • Heat a tbsp of ghee in a pan and add cashew & raisins. Remove it when the cashew turns golden brown. Keep it in a bowl.
  • Now roast grated coconut and cardamom powder for 2 minutes. Transfer to the bowl .
  • Add the remaining ghee and roast rava until the aroma begins to waft. Transfer rava to the bowl.
  • Add sugar and mix well. Slowly add warm milk to the mixture.
  • When the mixture is warm enough to handle, make it into balls/laddus. 
  • If you are not able to gather it into a ball, sprinkle some more milk and try again

Notes
  • Since we have used milk & coconut, shelf life is less (1 week - 10 days)
  • Store it in a air-tight container in the refrigerator.
  • Heat for 2 seconds in microwave before you eat for juicier laddu.
  • You can add water instead of milk to increase the shelf life of ladoos to another 5 days.

Mango Kalakand (Fudge)

It is not always about having a beautiful day! To me, it is about finding beautiful moments in an ordinary day. I believe that any day, however dark and rustic it maybe, has some shade of beauty in it…….. IF we look for them.



It might be sipping a perfectly brewed coffee while reading my favorite novel...

Or maybe just looking out of my window and pausing to enjoy the pitter-patter on the windowsill....

Or simply enjoy every bite of anything chocolate…well I confess, any desserts for that matter... :P

They say, “A moment on your lips is a lifetime on your hips.” But who cares what THEY say! I say, “Life is too short. So keep calm and eat your desserts first. After all, STRESSED spelled backwards is DESSERTS.” =))


So, what are you waiting for ! Make these yumilicious Mango Kalakand and add a tinge of beauty to any ordinary day.

Ingredients

Paneer (Indian Cottage Cheese) - 2 cups
Mango Pulp - 5 tbs
Milk Powder - 2 tbs
Sweetened condensed milk - 1 can (400 g)
Cardamom - 5 crushed
Pistachio - around 8-10 chopped
Saffron - few strands (optional)

Besan Ladoo/Chickpea Flour Sweet Balls

If somebody asks me, 'What is your signature dish (sweet) all your friends rave about?' I will shamelessly scream that it is Besan Ladoo.


Ok! Before you judge me...

I prepared this delicacy for Diwali, one of the many other significant festivals in India.Yeah, we Indians love to celebrate. Seriously, This is the easiest Indian sweet dish I have ever prepared and can be done in a jiffy with only a trio of ingredients.



Now, tell me who wouldn't be elated if people rave over such an easy-peasy dish.

Sweet Kuzhi Paniyaram

Sweet Kuzhi Paniyaram is a popular and traditional recipe of Chettinadu. This is a snack recipe, which can also be served as breakfast or appetizer for dinner. It is a favorite snack among kids, you can give this sweet paniyaram when they return from the school. They will surely love it. In earlier post, I have already posted the masala paniyaram version. The batter is same for this recipe also. This recipe will have excellent taste of jaggery, coconut and cardamom and healthy too. Here you go with the recipe....
