Bread Upma

At times, I am this over ambitious person when it comes to meal planning for the week.  And I miserably fail every time when it comes to breakfast. Most of the times, my Plan A would be some elaborate menu which outright-ly screams ‘FAILURE’. But knowing me better, I keep my Plan B, Plan C… Plan Z ready with Plan B – having a loaf of bread handy so I can make a quick toast or a sandwich. But more often than not, I will be forced to Plan Z almost every day – fruits! Come on, I told you I am a total failure with breakfasts. And then I get those angry glares from the bread loaf making me as guilty as possible.

Enough of failure stories. It’s time to brag a success story! It was one of those ‘The bread glares till I die of guilt’ days. And I knew how exactly to deal with them. I made this Bread Upma for evening snacks that used up the entire loaf. Yes, finally done with them all at once and they can never be happier as they cannot be any tastier.

It came out absolutely delicious if I can say so myself. Husband and I loved every bite of it. Give this recipe a try and I am sure you will not be disappointed.

Karamani/Lobia/Black Eyed Pea Salad

We take our evening snacks a little too serious at my home.  Both husband and I are not much of a breakfast person. We usually go with fruits and smoothies. But we definitely need something to munch in the evenings. As much as I would love to have an extravagant evening snack and keep the dinner simple, time is not being my best of friends these days. So I am forced to keep my snacks simple. Black eyed peas salad is one such snack that is healthy, delicious and can be prepared easily. With no further ado, here is the recipe.

The ingredients mentioned here are just the ones I used and to give you an idea. You can be creative as you want or customize it to suit your taste and availability of the ingredient.

Peach is one of the grand total of 3 fruits that my husband likes. We got a big box of peaches from Sam's club, so we're binge eating it. We usually eat it as a dessert post dinner. Today I was in mood for some smooothayyy, so peach smoothie it is!
Remember my avocado milkshake that I raved about? it was THAT creamy only more flavorful.

 It is.. umm..
Creamy
Sweet
Refreshing
A tad tart
Tropical
Very filling
Yes that's what it is.. and the bonus is it's color! So pretty right? Or is it just me? o_O
Anyhoo, let me give you guys the "recipe".

  • Peach - 1
  • Milk- 1/2 cup
  • Honey- 1 tsp
Method
Place all the ingredients in a blender and blend until smooth and creamy. And that's it!! Serve it with chia seeds/ peach chunks/ a drizzle of honey.

Tips

  1. You can also add a banana to make it even more creamy & healthy.

Eggless Homemade Pancake

After a while, we went to our favorite local brunch spot "Butterfield pancake house". Whenever we go out for brunch, I usually order a garden fresh omelette or oven roasted vegetable skillet, but my husband likes sweeter stuff and would order pancakes, waffles or french toasts. For the first time I tried pancakes to see why he likes them so much. I'm not a big fan of pancakes for breakfast or brunch as it's sweet but now I think I should change my mind, as it was awesome. It was soft, had a fluffy texture, spongy and was melting in the mouth like an ice cream. I like pancakes when served with fresh butter, whipped cream and a side of seasonal fruits ;-)

Ingredients

  • Maida/All purpose flour - 1cup
  • Milk - 1cup
  • Brown sugar - 1tbsp
  • Oil - 1tsp
  • Salt - 1/2tsp
  • Baking powder - 1tbsp
  • Butter - 2tbsp

Method

  • Add maida, milk, brown sugar, oil and baking powder together in a mixing bowl and then whisk it well without any lumps. Keep it aside undisturbed for 10-15 minutes.
  • Heat a griddle until hot in medium flame. Grease with butter and pour the pancake batter. Do not spread.
  • Wait until bubbles pop over the pancake. Then flip it carefully over other side and cook for few minutes in medium flame.
  • Once ready transfer hot pancake to the serving plate.
  • Repeat the same process for other pancakes too.
  • Serve the pancakes with maple syrup and fruits of your choice.

Tips

  • You can do this pancakes with wheat flour also.
  • You can make this pancakes vegan by adding almond milk.
  • If using wheat, milk usage will be more than maida.
  • You can add fruits like strawberry, blueberry to pancakes.
  • You can add cinnamon or vanilla essence to the batter for more flavor.

Red Chutney

You know how one big happy family works, right? Especially in most Indian families, or atleast mine, it is just not the immediate ones but includes the whole extended family of aunts, uncles, cousins and at times it might go to the extent of parents’ cousin’s mother-in-law’s sister!!!  You get the picture?

Of course, each one of us may have differing opinions and we may agree to disagree, but we have always had the best times when we all get together and enjoy the cheerful chitter- chatter.

And now, do not be surprised that I am going to relate the same with, wait for it – CHUTNEY!

Chutney by itself is one happy Indian family. It has relatives across the subcontinent with nicknames galore! Each chutney may have different name, different preparation methods, and different taste but in the end of the day, it never fails to disappoint the takers. It has something to give for every palate and always live in harmony with all its other relatives in the country.

This red chutney is kind of staple at home for idli/dosa! Idli/dosa with chutney is larger than life to us. It is a very quick and simple recipe that can be prepared in a jiffy. As I already mentioned, there are gazillion versions of them and this is mine! Hope you like it as much as I do.

French Toast

My idea of perfect weekend is to hang out with friends starting Friday night which goes on till Saturday night, wake up on a Sunday morning (5 mins before 12 PM is still Morning right? ) and have a tummy-full of breakfast or brunch.. Mostly I'll be making sandwiches, scrambled eggs, waffles, you know the ones which can be made in a jiffy with minimal ingredients and preparation..
Recently I made French toast and we love it because it's easier to make than I thought and it's the best way to use up the bread which is gonna go stale in couple of days..
This recipe is from the back of my vanilla extract bottle and it's definitely a keeper! I love them with a generous drizzle of maple syrup but if you have some time and patience, top them with fresh sliced fruits or some Nutella, custard or whipped cream..

Ingredients
  1. Egg- 1
  2. Milk- 1/4 cup
  3. Bread Slices- 3
  4. Sugar- 2 tsp
  5. Vanilla extract- 1 tsp
Method
  1. Beat egg, sugar and vanilla extract in a bowl.Stir in milk.
  2. Cut the bread diagonally into 2 halves.
  3. Dip them in the egg mixture and make sure both the sides are coated evenly.
  4. Cook them on a greased non-stick pan/skillet until both sides are browned.
  5. Serve with maple syrup.

Onion Tomato Chutney

I strongly believe that cooking ‘well’ does not necessarily mean cooking ‘fancy’. At times, or rather, most of the times, the simplest of all flavors could do so much magic to our taste buds. It need not be a complicated dish with ‘hard-to-pronounce’ ingredients but just simple food cooked with love and freshest ingredients you could get hold of.

‘Simple food’ is ambiguous and differs between persons belonging to different origin and cuisines. A dish that I consider simple can be complicated to a person in Italy and vice versa. In short, simple/comfort food is the one that each one of us grew up with, the food that we saw our mothers/grandmothers cooking and the food that made our childhood. For me, it is the South Indian cuisine and more particularly Tamil cuisine.

Idli/dosa to a South Indian is like bread/pancakes to my friends in the other part of the world. Idli/dosa paired with different types/flavors of chutney will make the morning scene in most of the Tamil house. To be more precise, chutney is just like how butter is to bread. Will it be so obvious if I say; chutney is the best friend of Idli/Dosa?

So here is the recipe of one such simple chutney that is very quick and easy to make, that can be stored in the refrigerator for at least a week and that makes an excellent side to idli/dosa/pongal and wide variety of other Indian breakfasts. Sounds perfect, right?

Vegetable Upma (Savory Semolina Porridge)

Well, this one needs no introduction! Vegetable upma, as most of you would know, is one of the most popular South Indian breakfast dishes. Liked by some and disliked by many :D

A small confession:

I have always hated upma as a kid. Why you ask? Simply because it was a torture and it was prepared too often. My mom realized that I was really having a tough time with upma and she made her version of upma with veggies.

I must say I eventually quit Upma haters club. I assure you it tastes too good plus healthy and can be prepared in a jiffy!! So let's get straight to the recipe !!

In a blender, combine all the ingredients and blend until smooth. Serve this pronto!

Kiwi Pineapple Smoothie

Whop! what an unrelenting, bitter winter it has been in Chicago. I have been longing for Spring and I'm pretty sure most of us are. I'm crazy about smoothies and I love to try various blends. Pineapple is one of our all time favorites. Instead of having a simple pineapple smoothie, I wanted to blend kiwi with pineapple and give it a shot. It was truly a trial but the fusion was really amazing. The preparation is pretty simple and its not only yummy, but packed with good benefits as well. Now here you go with the recipe.....

About ingredients

Kiwi: It is nutrient dense fruit which help to maintain healthy skin tone and texture, reduce BP and heart healthy. Most important aspect in kiwi is, its an immune booster. It contain Vitamin C and antioxidant.

Pineapple: It is an excellent source of  manganese which helps in building strong bones. It also has anti-inflammatory property, when taken regularly it helps preventing arthritis in elders. It has another important benefit in it, that is anti-coagulant.

                                                     Preparation Time: 5 mins
                                                      Serves :  2

Ingredients

Pineapple (cut into chunks)
1 cup
Kiwi ( peel skin off and cut into chunks)
1 cup
Honey
2 tbsp
Ice cubes
½ cup

Method

  • Put all the ingredients mentioned above in a blender and blend till it get to a smoothie texture.
  • Now pour the mixture into a tall glass and serve it cold :)

Tips

  • You can also use frozen pineapple, but I used a fresh cut one for this smoothie.
  • You can also freeze the kiwi in a Ziploc bag and use it.
  • If the fruits are frozen then you can avoid using ice cubes.
  • You can also use sugar instead of honey.
  • You can also add one banana with these fruits. If you add banana, don't add sugar or honey. The fruit itself will have right amount of sweet in it.

Carrot Milkshake

'Dear Winter, I don’t know how else to say this. But we are done. IT IS OVER! It  was love at first sight 5 months back when I first met you in Chicago. But you  have become too much to handle these days and also too commanding. Apart from the fact that you don’t let me wear my favorite dresses,  you do not even allow me to have my favorite milkshakes! But now it is time for you to leave and please do not stick around longer. I have had enough of you  already.Good bye!'

Yummy Avocado Milkshake

Anyone out there who has strong food cravings at weird timings? (hand raised here). Last week I had a craving for red-velvet cake! Apparently when I was 2 yr old I woke up in the midnight and craved for apple and my dad actually went and got it for me (Yes! I have the best dad in the world).

Today morning, I know its not summer yet but had a crave for creamy milkshake. I could have asked my husband but u know he is one of those who goes overboard and get extra creamy milkshake with extra large fries & some white chocolate cookies and make me hit the gym later :(

Aloo Paratha (Potato stuffed flatbread)

Potato is considered as universal favorite but not mine!! Until one day when I went to a dhaba with my friends, I ordered a big glass of lassi and my friends ordered aloo parathas. Hot aloo parathas were on the table but lassi took ages, I was so hungry that I couldn't resist taking a bite of paratha. That's it I fell in love and it became my most favorite punjabi dish ever!

Masala Paniyaram

Kuzhi Paniyaram is a popular Chettinadu dish. It's one of my favourite breakfasts. My mom does this dish very often which I miss it now and then :( I have tried my version with vegetables and spices. This paniyaram is perfect for breakfast, snack or dinner with thakkali chutney. The batter for paniyaram should be accurate or else you will not get a soft and crispy one.Lets get started :)
