Vegetable Pasta

Normally i do this vegetable pasta during weekend night for dinner along with garlic bread and orange juice. Any bachelor can try this recipe it is very easy to make, i used penne pasta but you can use your choice of pasta to this recipe. Here you go with spicy yummy vegetable pasta recipe!!
                        
                       


Ingredients

Penne Pasta
2 cups
Mixed veggies ( carrot, beans , frozen peas, green capsicum)
1 ½ cups
Onion ( finely chopped)
1
Tomato ( finely chopped)
2
Green chillies (finely chopped)
2-3
Black olives ( chopped)
7-8
Prego Italian Sauce ( traditional)
2tbsp
Italian seasoning
1-2 tsp
Turmeric powder
½ tsp
Red chilly powder
1-2 tsp
Oil
As needed
Salt
As per taste




Method 


  • Cook pasta with salt, oil, till soft, as per the packing instructions. Once pasta cooked drain the water and keep it aside.
  • In a pan heat oil and add green chillies, chopped onion, saute till it turns transparent pink color. 
  • Now add tomatoes along with salt, red chilly powder and turmeric powder. Mix well.
  • Cook in medium flame until tomatoes get soften and raw smell goes off in the masala.
  • Then first add carrot and beans, give a quick stir. Cook until masala blends with the veggies.
                                     

  • Now add capsicum , frozen peas and black olive. Give a quick mix to these veggies in medium flame and cook for 1 minute. Since these veggies need not be cooked for a longer time and remember they should maintain their crunchy texture. 
  • Then add prego pasta sauce and iltalian seasoning. Mix well and cook for a few seconds.
  • Add the penne pasta to the masala. Cook in medium flame for 5-8 minutes, untill masala blends well with the pasta.
                     



  • Switch off the flame. Yummy spicy vegetable pasta is ready to be served hot.

Tips 

  • Always remember to add the pasta in boiling water, so that it will cook well and retain its texture.
  • Add drop of oil in boiling water so that pasta will not stick to each other while draining and using further.
  • You can also add grated cheese at last and while serving pasta. I skipped this step. 
  • You can also add veggies like zucchini, all color capsicum, broccoli.
  • If you prefer cheese, i would suggest Parmesan cheese it goes best with this recipe.
