Vegetable Upma (Savory Semolina Porridge)

Well, this one needs no introduction! Vegetable upma, as most of you would know, is one of the most popular South Indian breakfast dishes. Liked by some and disliked by many :D

A small confession:

I have always hated upma as a kid. Why you ask? Simply because it was a torture and it was prepared too often. My mom realized that I was really having a tough time with upma and she made her version of upma with veggies.

 I must say I eventually quit Upma haters club. I assure you it tastes too good plus healthy and can be prepared in a jiffy!! So let's get straight to the recipe !!


  • 1 cup rava/semolina
  • 1 large onion,sliced lengthwise
  • 2 small potatoes,cubed
  • 1 carrot, finely chopped
  • 1 cup of beans,finely chopped
  • 1/2 cup peas,fresh/frozen
  • 3 green chilies, slit lengthwise
  • 1 tsp ginger,shredded
  • 1 tbsp ghee
  • 1/2 tsp turmeric powder
  • 1 tbsp cilantro,finely chopped
  • 3 tbsp shredded coconut
  • 2 tsp lemon juice
  • 3 cups of water
  • salt  

  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal
  • a pinch of asafoetida
  • 5-6 curry leaves
  • 1 tbsp oil

  • Dry roast rava over low flame until it turns slightly brown.Transfer it to a bowl
  • Heat 1 tbsp of oil in the same kadai & add mustard, when it splutters add urad dal,asafoetida & curry leaves
  • Add onions & saute till it becomes transparent.Add green chilies,ginger and saute for 2 mins
  • Add all the veggies & turmeric powder and saute for 5 mins.
  • Add water,salt,lemon juice & shredded coconut.Once water begins to boil,add 1 tbsp of ghee.
  • Reduce heat and slowly add rava to the boiling water and keep stirring so that the lumps don't form
  • Cover it & cook until you attain the desired consistency, I like it dry.
  • Garnish with chopped cilantro and serve hot with chutney/pickle/chips.

Plain upma is prepared in the same way, just omit the step where you add veggies. Rest ingredients and steps remain same.
