Avocado Pina Colada Bars

Every time I go to Costco I am drawn towards Fruits aisle and I have been obsessed with avocados lately. I have been including them in my breakfast, lunch and what not! Just when I thought I was running out of ideas I came across this fun treat by Raia' Recipes and I couldn't wait to try it. Well I wouldn't say this is copycat version of it since I have changed few ingredients as per my Mr.Taste Buds's demand.Here we go, No BAKE ! No SUGAR! No Artificial colors! Less dishes to wash!- You are going to love these bars.  

How many Pina Colada lovers out there? Pina Colada is a Puerto Rican cocktail made with rum, coconut & pineapple juice. But in my dictionary anything I make with coconut & pineapple is Pina Colada :P


So there are 2 layers (obvious much !) Smooth Chocolate layer on top of juicy Avocado Pina colada layer.

Layer 1 { Avocado Pina Colada }

1 ripe avocado
4 tbsp honey
6 tbsp coconut oil, melted
1& half cup shredded coconut
2-3 drops of pineapple essence
a pinch of salt  

 Layer 2 { Chocolate }

Chocolate chunks / chips

Method

1. Add all the ingredients for layer 1 to the blender and blend until everything comes together.
2. Line a cookie tray (or any tray) with foil & pour the mixture to the tray.
3. Spread it and place the tray in freezer.
4. Heat a pot with water on low flame. Take a non-plastic bowl, add chocolate   chunks to it and place it over the steaming water.
5. Keep stirring until it melts, pour it over the chilled green layer and return to the freezer.
6. Freeze it until the chocolate layer is hardened and cut it into desired shape.
7. Remove the foil and store it covered in the freezer. Serve chilled



  
 Note 

Avocado is also called as butter fruit in some countries.
You can melt the chocolate using a double boiler/ microwave too.
You can alternatively add sugar instead of honey but I can assure you it tastes too good with honey and its healthy too !
I am curious to know if we can substitute avocado with banana. I'll let you guys know once I experiment :P
